Amber malt has a dry, biscuity flavour and can be used to different purposes in a wide variety of beers.
At 1% - 2% of the grain bill it makes for an interesting "salt and pepper" in paler worts, as well as adding depth of colour.
Use at 5% to 10% in amber ales, 10% to 20% in porters and stouts.
